Charcuterie

The aim with all of our Charcuterie is to remain true to the ideals we associate with such foods. The very finest ingredients, passion and attention to detail in their preparation and patience. Only by combining this approach with a desire to provide a broad range of truly remarkable products can we feel happy that our Charcuterie is living up to its potential. Whilst we are pleased that, with the newly added curing rooms, smokehouse and drying facilities the ability to produce these will have expanded, we are still keen to ensure that production remains very small scale and that complete consistency is achieved in the quality of ingredients and the care and time taken in the preparation of each end product. In this way we feel confident of continuing to offer some of the very best cured salumi, chorizo, proscutti and other cured hams available. All of the herbs and spices added to our meats are of the highest available quality, generally ground here from fresh, and when combined with our meats provide products that, in terms of aroma and flavour, cannot be mistaken with any mass produced alternatives. To begin with we are offering some of our most popular items, listed in the shop below, we will gradually build this range up to include all of our different products.
